Rakott Krumpli

Now, what do you do with all the hard boiled eggs? The Hungarians found a solution!
Rakott Krumpli ….A wonderful Casserole made with Kolbasz, Potatoes and Hard boiled eggs.

4 lbs. cooked potatoes, sliced
1 ½ lb. Kolbasz (smoked sausage), sliced thin
½ green pepper, diced (optional)
½ lb. oleo or butter
6-8 hard booked eggs, sliced
1 pt. sour cream
1 raw egg

In a greased casserole place a layer of potato, then a layer of sausage, then a layer of hard cooked eggs. Dot with butter or oleo. Season with salt and pepper ( I use season salt) Combine sour cream and raw egg, spoon some on. Continue layers in above order, ending with potato. Spread top layer with sour cream and sprinkle with bread crumbs. Place uncovered in 350 degree oven and bake until top is lightly browned, about 45 min.
