Dough: half a cup of milk, one cup of soda water, one cup of flour,
one egg. Mix this and add some oil so that it does not stick to the
pan. Heat up the pans (I ususally use two pans, as it is much
faster), and fry both sides of the pancakes on high flame. The
pancakes should be very thin. If you are skilled, you can flip them
over in the air, but if you are worried about your ceiling and
furniture, use a spatula. If the pancakes break, then the dough is
too loose, so add an egg or some flour.
Curd: one pound of farmer cheese, one cup of sour cream or yougurt,
sugar to taste, the juice of half a lemon. It is heavenly! Smear
them on the pancakes and roll them up.
