In the second half of the 16th century the Ottoman Turks occupied Hungary. The bakers prepared bread in the shape of their crescent to mock them. Here is the recipe:
Kifli (Crescent Rolls)
Serves 4 adults (About 12-16 rolls)
Approximate preparation time: 20 minutes
Approximate "dough-rising" time: 15-30 minutes
Approximate baking time: 12-15 minutes
Ingredients:
3 1/2 cups of unbleached four 1 egg
1 package of quick-rising yeast Of the following seeds,
1 teaspoon of sugar chose what you like best:
1/4 cup of very warm water Sesame seeds
1/4 cup of warm water (needed separately) Caraway seeds
1 teaspoon of salt Poppy seeds
1 cup of warm milk Coarse salt
3-4 tablespoons butter
To complement the kifli, serve with some or all of these items:
Butter Hard salami Sliced onions Cooked ham
Hot chocolate Banana peppers Mild colbycheese
Dissolve yeast in the 1/4 cup of very warm water. Add sugar and stir. Mix 3 1/2 cups of unbleached flour and 1 teaspoon salt in a medium-sized mixing bowl. Make a depression in the flour and add the yeast there (like you're pouring gravy on mashed potatoes!), then warm milk and knead for about 5-10 minutes. Cut dough in half, and continue kneading it until dough is smooth and springy. Obviously, you will now have two, nice halves of dough. Take one half of dough and cover with a clean kitchen towel. Roll out the other half with a rolling pin into either a circle or rectangle, depending on what shapes you want the rolls to be. Brush with melted butter.
To make crescent-shaped rolls (which, by definition, is kifli), cut circle into six or eight wedges. Roll the pyramid-shaped dough from the base to the point, and place on ungreased cookie sheet. Be sure to leave about 2 inches in between them. Brush with beaten egg, and sprinkle with your desired "topping" (e.g. poppy seeds, coarse salt, etc.). Cover rolls lightly with plastic wrap. Heat oven to 200 degrees, and turn it off. (Remember, the oven is off, but it's still warm because you just had it at 200 degrees!) Fill your mixing bowl with hot water and place it on the bottom rack in the oven. Now place the rolls directly above the bowl of water and close the oven. Set the timer for 15 minutes. If the dough has doubled in size after 15 minutes, take it out, making sure not to subject it to a draft. Now heat oven to 400 degrees and bake for 12-15 minutes until golden brown and
delicious.
Jo étvágyat! Bon appetite! Enjoy!
