Hortobágyi Palacsinta

Makes 100 small palacsintás;
1 Qt. flour
1 1/2 Qts. milk
4 oz. melted butter
1/2 cup sugar
12 eggs
2 teaspoons vanilla
salt to taste
Fry in hot egg skillets or grill using 1/2 oz ladle ( or 1 Tablespoon )
Be sure to spread them out so it won't be too thick
In addition to jelly for the filling you can also use cottage cheese w/
sugar.
French pancakes are filled with strawberries and are quite large,
and you can find them in some fine restaurants.
I used to use 4 egg skilletts at a time on a hot top stove
the same method as June Meyer.
You may want to make them a little larger than mine.

Hortobágy is a town and also a plains region in hungary,
and I don't think ( but it's possible ) that they have their own
version of Palacsinta
